Economical Meals

I have decided to post some of our favorite recipes that are very inexpensive, delicious & easy.

One of the first on the list, Crockpot Pinto Beans is particularly cheap and very good. I use a 6 quart roasting pan so the water measurements probably differ slightly than the crockpot version.

Here is the recipe:

1 16oz package pinto beans

2 freshly minced garlic cloves

1 tablespoon oil

1/2 of a chopped onion

1-2 teaspoons salt


Wash and sort through the pinto beans. Put everything but the salt in the crockpot or roasting pan, and cover within 1-2 inches of the crock brim with water. Set the temperature on high and cook for 5-6 hours.

Right before they finish cooking add the salt.

We love to eat this with a dollop of sour cream and some cilantro.

Another way I like to make it is to take about half of the beans, add about a 1/2 teaspoon of hot sauce, a 1/2 teaspoon garlic powder, a dash more salt, a pinch of pepper, then mash (or blend with a hand blender) for some refried beans. A great way to eat this is with homemade tortillas, sour cream, picante sauce and all the extras such as lettuce, tomato, cheese & avocado.
